Description | The Liberty pumpkin bread tradition. |
3 cups sugar 1 cup oil 4 eggs 1 1/4 teaspoon salt 1 teaspoon cinnamon 2/3 cup pumpkin 3 1/2 cup flour 3 teaspoon baking soda 1 cup chopped nuts
Combine all ingredients and mix. Divide into 2 pans. Bake at 350( for 1 hour. Let cool 20 minutes before removing from pan.
Although the Mattingly's don't make this anymore (Sher introduced us to pumpkin bread about 30 years ago), this remains one of Matt's all-time favorites.
