Description | A simple but tasteful addition to any meat |
1 1/2 cups all-purpose flour 1/3 cup granulated sugar 1/4 cup firmly packed brown sugar 2 teaspoons baking powder 1 teaspoon ground cinnamon, divided 1/2 teaspoon salt 1 egg 1/2 cup buttermilk 1 cup finely chopped apple (about 1 large, peeled and cored) 4 Tablespoons (1/2 stick) butter, melted 1/3 cup chopped nuts (any kind)
Preheat oven to 375(. In a large bowl, combine the flour, granulated sugar, baking powder, 1/2 teaspoon of the cinnamon, and salt. In another bowl, beat the egg with milk, then stir in the apple and melted butter; add all at once to flour mixture and stir until just moistened (batter will be very stiff). Spoon batter into a greased muffin tin(s), filling each cup about 2/3 full. In a small bowl, combine nuts, brown sugar, and remaining 1/2 teaspoon cinnamon; sprinkle mixture over muffin tops. Bake for 15 to 20 minutes or until wooden toothpick inserted in center of muffin comes out clean. Remove from pan immediately and serve warm.
